The Return Of Red Cake

It’s that time of year again - when the price of berries has fallen to an acceptable level to make my baking masterpiece - the Red Cake.

Or, it would have been Red Cake, except BP bought a mixed berry punnet instead of raspberries only. It’s slightly more tart than usual, but lovely none the less.

BP suggested we call this version “Purple Cake”, after the lovely hue of the combined jammy fruits. I’m more taken with the name “Hedgerow Cake”, as it makes one dream of lovely lazy afternoons picking the mix of fruit from their bushes and retiring home to cook up the delectable treat.

Fruit mix-up aside, it still really hits the spot. Summer might be the time for light meals, but I can’t resist a proper pudding and custard any time of year. Especially following a Sunday roast (yes, which isn’t very ’summer’ either).

Red Cake And Custard

I’m debating a small top decoration. I sprinkle the cake with sugar before baking, mostly for good looks, and I’m wondering if really chunky ‘coffee sugar’ would look fabulous with it. I’ll be checking out the prices in the supermarket next time I bake a Red Cake (next week or the week after, I think) - and testing it out.
