Sunday With Lemon Roasted Chicken

Pulled out two portions of chicken drumsticks from the freezer for BP and my Sunday roast. Soaked them in a lemon glaze and roasted for an hour. Gorgeous!

Since we’re eating out of the freezer until further notice, I’d planned to dress up these beauties as our roast. BP was pleased as there isn’t any leftovers that we never get around to eating.

Surprisingly enough, although I’ve been cooking up this recipe since September, this was the first time we’ve eaten this dish together. BP was home on a Sunday all through September to Christmas, and since we were getting the meat packs, most weeks we were eating roast beef.

BP loved it, so succulent, tasty, perfectly cooked…
The only thing I was disappointed about was that I didn’t have any veg with it. Next time I do this recipe, I’ll be trying a lemon-dressed carrot and fennel salad. Experience says BP won’t eat any of that (well, not past a bite that says he tried it).
