This is my entry to the competition at Maninas:Food Matters blog, to win Marcus Wareing’s new book, “One Perfect Ingredient”.
My perfect ingredient is salmon – the taste of the fish is fantastic, and the texture adorable. Then there’s that fantastic orange-raw pink-cooked colour! I believe it to be the best fish to eat. And my favourite way to cook salmon is my Seed Crusted Salmon.
Ingredients:
1 salmon fillet
2 tablespoons mixed small seeds, such as sesame
1 tablespoon finely chopped parsley
a little beaten egg
Method:
1 – Preheat the oven to 200C. Put the salmon skin-side down on a baking tray.
2 – Brush the salmon with the egg. Mix togther the seeds and parsley, and press onto the salmon.
3 – Bake the salmon for 15minutes.
4 – Serve with couscous.
The salmon will be flaky and well-cooked and the crust crunchy, a perfect texture combination.
